Anne’s birthday salmon
I made salmon bowls for Anne’s belated birthday dinner last week. I’ve been on a salmon kick recently, in excess, since now I’m sick of salmon. I do this more often than I’d like to admit. I think it’s simply part of cooking for one. Admittedly, a large part of the problem is that I shop at Costco for my business. While I’m there (several times a week) I will also pick up food for myself. I think we can all agree that shopping at Costco when you’re cooking for one, isn’t the best strategy. This is another “something” that I need to work on.

tropical summer fun

“Fresh Fruit Week” – Day 1
I have a peach tree in my backyard and boy do I love it! So much so, that I’ll be using the ripe juicy peaches and other fresh summer fruits in every recipe for the rest of the week. I really have no choice. The season is fast and furious and it’s a “use it or lose it” situation.
The peach tree I have now is a sweet little dwarf tree.
But back when we bought the house in 1999, I planted a full-size peach tree, and was that ever a mistake!
By May 2003, the tree got so big and produced so much fruit that I could not keep up.
The previous three photos were taken at a “Peach Pickin’ Dinner” where I begged my friends to come over and help me pick and eat peaches. We picked enough peaches to cover the entire kitchen island, and those were just the ones that were ripe that night!
By 2005, the tree could not keep up either.
It produced so many peaches that the limbs broke under the weight of the fruit.
A couple of years later, we remodeled the entire backyard, so the damaged and the sad big peach tree was out and the dwarf peach was in.
The dwarf is in the same place and it must be the perfect local for such a tree because it produces like crazy too.
Thankfully, not a kitchen island full of peaches, but a cutting board full every few days of the short season. Much more manageable!

…not your everyday tuna fish sandwich
I went to Costco yesterday with the sole purpose of buying a package of their fantastic ahi tuna. If they didn’t have any, I had no idea what I was going to make for dinner… I was craving ahi and ahi it was going to be… hopefully.
Connor came along with me and as we walked toward the back of the store, we passed a very tall older gentleman wearing a blue pinstripe seersucker suit. He was holding an extra-large reusable “cold” bag. You know, the insulated kind you take shopping to help keep your groceries cold on the way home. He was talking rather loudly and animated toward the guy selling the cell phones. Not in a mean tone, just really loud and attention-drawing.
On our way to the seafood, we got distracted by some cool maps we saw, and in the process, Mr. Seersucker passed us by. When we arrived at the seafood area, he was already there, filling his bag with salmon, crab legs, lobster tails, and more. Basically, he was just going down the aisle, putting one or two of every sort of seafood in his bag. As I scanned down the open refrigerator for the ahi, I walked past him. There it was, at the far end of the refrigerator, the ONE and ONLY package of ahi left. I snapped it up and put it in our cart. Out of the corner of my eye, I could see Mr. Seersucker, near the center of the long refrigerator, looking in my direction, he did not look pleased.
Connor and I headed to the bakery to get the rolls for our ahi sandwiches and I watched as Mr. Seersucker called over an employee and proceeded to ask him about finding some more ahi tuna for him. The employee shook his head and told Mr. S. that no, there was no more ahi today.
Linda scores with a mere second or two to spare! Sorry, Mr. Seersucker, the crab legs, lobster, and salmon will have to do for you today.
The other thing from Costco that I used was this tasty Roasted Pineapple & Habanero Sauce as my marinade. But use whatever sort of marinade you like, such as teriyaki sauce.
The ever-popular roasted raspberry-chipotle sauce would be a great choice too.

fruity guacamole
On Saturday night I taught a cooking class and served dinner at a wedding shower for Leah, the beautiful bride-to-be. This is the darling and super creative invite that Jenny, Leah’s sister-in-law, sent out… attached to a real cutting board with a real whisk at the top ~ too cute! (and it was even cuter before I marked out the personal info…)
The guacamole I served reminds me of one of my favorite restaurants in Phoenix, Barrio Cafe, where Chef Silvana Salcido Esparaza’s guacamole is made table-side and is the first place I ever saw pomegranate arils added. Remember, they aren’t called pomegranate seeds. The correct name is arils. If you don’t remember, you can go back to THIS, my 100th post, where I tell you all about it (and even how to freeze the arils). Today marks my 834th post. We’ve come a long way baby!

mangosteen-another “superfood”
How can it only be Wednesday? Isn’t it strange how some weeks just fly by and others never seem to end?! I’m going to pretend it’s Friday and give you a cocktail recipe today, albeit a somewhat healthy one! (now that is a true oxymoron) It has a texture somewhat like a smoothie and with all that alcohol, it is smooth! Now you’ll have time to get to the store and be prepared when the weekend finally does roll along…

Cyndi Greening
Another December birthday for another important person in my life. Today is Cyndi Greening’s birthday. Cyndi is a filmmaker, teacher, writer, webmaster, and my dear friend! I first met her when we worked on a fundraiser for Phoenix Children’s Hospital called the Beach Ball, some Without Cydni, there would be no Les Petites Gourmettes blog! I’d had my website for about 10 years and was itching to turn it into a blog. Thanks to Cydni, that became a reality and 125 posts, and nearly 4 months later, here we are. Cyndi, thank you, and Happy Birthday! xoxo
Way back on September 16, Cyndi made a comment about a mango and chicken recipe she had gotten from me years ago. I’m not quite sure if this is the recipe she was talking about, but it’s a great appetizer and can be either passed or be used as part of a buffet at a Christmas or New Year’s Party. It is also perfect alongside a salad for a light lunch or dinner. So in honor of Cydni, I shall share it here today.
For the chicken meat, I purchase a rotisserie chicken and use the breast meat for this and the dark meat for something else, maybe chicken salad sandwiches or stir-fry.
