red and green… not just for Christmas

When I conjure up red and green, I automatically think “Christmas!” But snowmen, sleigh bells, and Santa are the last things you’ll think of when you see and then taste this refreshing summer salad.

Watermelon Summer Salad

2 cups seedless watermelon cubes
2 thin slices red onion, cut into bite-size pieces
4 pitted Kalamata olives, sliced
Juice of 1/2 lime
2 teaspoons olive oil
3 large mint leaves, stacked, rolled, and then thinly sliced
3 tablespoons crumbled feta cheese
Freshly ground black pepper

Combine the watermelon cubes, red onion, olives, lime juice, and olive oil in a medium bowl.  Add the mint and feta and toss to combine.

Season with freshly ground black pepper and serve immediately.
