Crudités Soup

I serve crudités at every gathering I host. It’s the guaranteed way to have something for everyone.  All vegetarians, vegans, guests with allergies, and dieters are happy, and quite honestly relieved when they see a big old tray of fresh veggies on a platter.

If you have leftover vegetables at the end of the party, obviously, it’s easy to just snack on them throughout the week. But another way to use them up is to turn them into soup.

Go Cards

That is exactly what I did after Marissa & Jeff hosted a “Go Cardinals” party at the Cards vs. Packers game last month.

The same two teams will face off at the University of Phoenix Stadium this Saturday. Look for me in the stands!

I’ll be a few rows up, around the 40-yard line. On the Arizona side – of course!

You can use any and all leftover vegetables for this soup.

“garbage” pasta

As I mentioned a few days ago, I make it my mission to clean out the fresh food in my refrigerator before we go out of town. The easiest way to do that in the winter is to make a soup and the easiest way the rest of the year is to make pasta. I call this “garbage” pasta because I’ll put any and everything in it.

This particular time, I had a partial box of cherry tomatoes plus fresh heirloom tomatoes from my garden. In addition, there were partial bags of green beans and sugar snap peas. I always have garlic and onion on hand, so those always start the dish.

The first step is to get a big pot of water boiling. Add salt and blanch vegetables such as green beans, sugar snap peas, asparagus, snow peas, carrots, broccoli, and cauliflower for a couple of minutes. Use a slotted spoon or spider to remove them and have a big bowl of ice water ready to drop them into – to stop the cooking.

Once they’ve cooled down, drain and set aside.

to my wonderful neighbors – in “the hood”

Orange Sugar Snap

I mentioned my fabulous neighbors yesterday.  I can’t begin to describe how blessed we are to live in such a wonderful community. Everyone here supports each other and we all come together throughout the year for bunco, progressive dinners, a fall or winter party, and the best Halloween trick-or-treating around!  The one thing I don’t think I’ve mentioned before is that I’m a Scottsdale,  Arizona native, a rare breed indeed! I’ve lived in the “Valley of the Sun” all my life and in this great neighborhood for the last 11 years.  I can’t begin to imagine not living here!  So a quick shout out to all the amazing women who are raising their families here too… including Amy, April, Cindi, Dana, Denise, Gail, Ginger, Jan, Jeanie, Joanie, Joanne, Kelly, Kirsten, Lisa, Lori, Marci, Mary Ann, Rainey, Robyne, Ronnie, Sarah, Susie, and Whitney… love you all!  And in your honor, here is another “Easy-Breezy” recipe, with the promise of “more to come”!
