coffee tuna

Seared ahi tuna is already one of the easiest and most impressive things to make for a special occasion or on the fly any ordinary weeknight.

A little salt and pepper, a little oil, and a hot skillet or grill pan are all you need. I’ve decided to make it a tiny bit more complex, by adding a marinade of coffee, sugar, and salt.

See, not too much more difficult, just a little something extra.

…not your everyday tuna fish sandwich

I went to Costco yesterday with the sole purpose of buying a package of their fantastic ahi tuna. If they didn’t have any, I had no idea what I was going to make for dinner… I was craving ahi and ahi it was going to be… hopefully.

Connor came along with me and as we walked toward the back of the store, we passed a very tall older gentleman wearing a blue pinstripe seersucker suit. He was holding an extra-large reusable “cold” bag. You know, the insulated kind you take shopping to help keep your groceries cold on the way home. He was talking rather loudly and animated toward the guy selling the cell phones. Not in a mean tone, just really loud and attention-drawing.

On our way to the seafood, we got distracted by some cool maps we saw, and in the process, Mr. Seersucker passed us by.  When we arrived at the seafood area, he was already there, filling his bag with salmon, crab legs, lobster tails, and more. Basically, he was just going down the aisle, putting one or two of every sort of seafood in his bag. As I scanned down the open refrigerator for the ahi, I walked past him. There it was, at the far end of the refrigerator, the ONE and ONLY package of ahi left. I snapped it up and put it in our cart. Out of the corner of my eye, I could see Mr. Seersucker, near the center of the long refrigerator, looking in my direction, he did not look pleased.

Connor and I headed to the bakery to get the rolls for our ahi sandwiches and I watched as Mr. Seersucker called over an employee and proceeded to ask him about finding some more ahi tuna for him. The employee shook his head and told Mr. S. that no, there was no more ahi today.

Linda scores with a mere second or two to spare! Sorry, Mr. Seersucker, the crab legs, lobster, and salmon will have to do for you today.

The other thing from Costco that I used was this tasty Roasted Pineapple & Habanero Sauce as my marinade. But use whatever sort of marinade you like, such as teriyaki sauce.

The ever-popular roasted raspberry-chipotle sauce would be a great choice too.

“lame name” game

I seriously need your help! I created the most dazzling dish the other night but I can’t figure out what to name it. I dreamt about it that night, prayed about it the next morning, and have been racking my brain, but everything I come up with is lame and doesn’t do this divine tuna justice. So, I turn to you, my smart, clever, and innovative followers for help and support. If I use our suggestion, a cookbook shall be sent or delivered to you, with my undying gratitude. As Dave said, “This should be on a high-end restaurant menu!” Keep that in mind whilst conjuring up your nom de guerre. Wow, look at how my vocab has increased, just since yesterday! Incredible how using a thesaurus can change your life.

OK, enough of that, on to the tuna. I planned to sear the tuna and serve it with sugar snap peas. I was also thinking of adding cannellini beans and shelled edamame, but when I actually went to make it, I had neither. Dang it, now what? Marissa and I had been out running errands all day and the last thing I wanted to do was get back in the hot car. As usual, that meant it was time to improvise. Sometimes that turns out so so, other times the results are truly awful, but this time – pure genius! I do believe it was the red kidney beans that really made the dish pop. I understand that they appear to be a strange addition, but somehow it worked.

sharing

Yesterday I mentioned the outstanding sliders that Barb, Kim, and I had at Chaparral Pines in Payson, Arizona. We split an order and I’ve been dreaming about and wanting MORE every moment since then! I dissected the menu description and, by Joe, I think I’ve got it! They are so fabulous, they must be shared – here you go! These would be a great addition for next year’s 4th of July BBQ.  BTW, you will have extra mayo and onions leftover after you make the 12 sliders – this is a good thing… a very good thing!
