Christmas Potluck Recipe 11
Lisa made these fluffy triangles of goodness. The adjustment I’m going to make to these is the exact opposite of the adjustment I made to the recipe, also using puff pastry, that Kim made in the last post. For Kim’s puff pastry, I adjusted the recipe to make half as many because they were too small and for this recipe, we’re going to make twice as many because these were honestly, too big for an appetizer party. Perfect size for a lunch dish though, if you want to make the original recipe and go that route.

SW – so good!
If your house is anything at all like mine, then you’re always waiting for that last person to get home before dinner can be served, or finish being made. All of the components for these tacos need to finish at the last minute. Although not as hard or as much of a pain as it sounds!
You can prep everything for the salsa well ahead, just don’t dice or mix in the avocado until the last possible moment. The slaw and its dressing can also be made well ahead, don’t mix together until just before serving though, or it’ll get soggy. And the spice mix for the tuna should be ready to go, but since the tuna only takes a couple of minutes to sear, again wait until the very last moment. As proof of how far ahead it can be done, I had plenty of time to prep everything, take and Photoshop the picture of the prepped stuff, and write this entire blog post and recipe, while waiting for that elusive family member to arrive… maybe I’ll call now and begin my nagging … “What time DO you think you might be home? We are hungry!”

Amy’s Famous Taco Soup
My friend and neighbor, Amy Kilpatrick, makes this yummy and oh-so-satisfying soup every Halloween night and shares it with all who come by and are looking for a bite to eat. The soup can be doubled, tripled, or increased by any amount you need to feed a crowd. Delicious served with a side of cornbread. It is the epitome of the “Easy-Breezy” category and is guaranteed to be an adult and kid-pleaser! For whatever reason, I never seem to have the taco seasoning mix packages around or forget to buy them when I’m at the store, in that case, I just make my own with the spices I always have on hand. An added bonus to making your own…. tons less sodium than the pre-made stuff… you will be shocked if you look at the sodium content on one of those mixes! That recipe is at the bottom of the page.
