1 pound muffins

It doesn’t make sense that this recipe did not appear on my blog long ago.

I developed it back in the late 1990’s and it was published in “Reflections Under the Sun: The Brightest Collection of the Best Recipes from the Junior League of Phoenix” in 1999.

I remember being so pleased when the JLP requested a recipe from me. I hadn’t been a member for a couple of years by then.

I had become a member in 1992, back when the previous cookbook was being published, joining too late to participate in that project.

Anyhow, everyone loves these muffins. We often make them for our graduation luncheon during summer cooking classes with the teens and there is never a crumb left. How they have been so elusive and not yet appeared here, is beyond me.  Make a batch now and thank me later!

Easter dessert

Bonus Photo – The full moon setting this morning at 6 am – gorgeous!

Citrus, specifically lemon, is my favorite dessert to make for Easter. The thing is, my guys don’t love citrus as much as Marissa and I do. Since Marissa isn’t coming home for Easter this year (picture my eyes welling up at this moment), I’ve decided to cater to my husband and son and make something different.

As I was strolling leisurely through Costco earlier this week (picture the one in a million chance of that!) picking up a leg of lamb, spiral ham, and other Easter dinner necessities, I spotted this carton of 18 luscious plums.

Immediately, I thought “plum and raspberry” – so I picked up a package of raspberries too.  Since I’m not a natural baker, I searched the web and found this lovely cake on marthastewart.com. I hope my guys like it… and as for my sweet Marissa… I miss you! xoxo

breakfast for dinner

Within the first couple weeks of each new year, predictions of upcoming food trends are announced.  One of my favorites this year is “breakfast for dinner”. Now, that is one trend I can get on board with! I love breakfast foods and I especially love to eat them for dinner, strangely it seems like such a treat. These light and fluffy little slightly savory pancakes with a lightly sweet topping are what I consider a perfect ending to the day.
