Greyson’s pancake dippers

Our grandnephew, Greyson, spent the long weekend with us. He is only 4 1/2 … so his parents, Tony and Amy, were along for the ride too. They are from Wisconsin. Tony is the son of Dave’s oldest brother, Roger. Amy is a dental hygienist and she had some continuing education classes to attend, so they made it into a mini-vacation.

On Friday, we met up with Tram, Steve, Zak, and Zoey along with Raechel and Brooklyn at The Simple Farm for their Pumpkin Patch and Tour.

Greyson especially liked the goats, I have no photos to share of Grey enjoying the goats because I was holding Zak at the time. Holding babies always trumps photo taking!

On Saturday morning, I made pancake dippers for breakfast. Grey and Tony enjoyed them poolside. Well, not exactly pool “side” more like swim-up bar “side.”

I have posted about pancake dippers before, but the last time, I did not include a recipe. This time, I shall!

Father’s Day breakfast

Yesterday morning, Connor pitched in to help me make a simple Father’s Day breakfast for his dad.

I was already working on an early afternoon dinner for 8, so I didn’t want it to be some big elaborate morning meal. These pancakes are about as light and fluffy as it gets.

Plus, with the two of us working together, it was a breeze to get on the table in less than 20 minutes.

make this for breakfast this weekend…

… and thank me later.  Connor and I are in San Francisco this morning, with our sweet Marissa. We arrived last night and are ready for a fun-filled, big city, mom and kids, weekend!

Last weekend, I made these pancakes for Connor and Patrick, his Flagstaff roommate, who was down for the weekend. I started us all out with a stack of three each… which was two too many for me. Dang, these babies are rich! Be sure you have a tall glass of ice-cold milk to wash them down.

The inspiration to make them that morning was two-fold. Firstly, I had a bunch of overripe bananas to use (isn’t that always the case?) and secondly, when we were in Wisconsin, Jen’s boys kept pestering her to make her famous banana pancakes. Sadly, we never remembered to buy bananas when we went grocery shopping. Connor has never had Jen’s pancakes, so I felt obliged to serve them up. I make the call to Jen to get her recipe, but since there is a two-hour time difference when she didn’t answer the phone, I figured they were already down at the lake. So, I winged it and they turned out pretty good, although I’d still like to get my hands on her version.

I have a cool website to share with you today. Did you know that you can find out where your milk and other dairy products come from? How cool is that!?

This Website allows you to type in a code from any dairy product. It then tells you where it’s from! Great to know where your milk, yogurt, butter, cheese, etc. are from and how far it had to be shipped to get to you. The code from the gallon of Fry’s brand milk that I typed in showed me that my milk came from the Tolleson Dairy, which is about 21 miles from my home.  Check it out for yourself and see where your milk products are coming from.

1962 advertisement

This is a 1962 advertisement for Aunt Jemima pancake batter.

It reads:

“Just about the best breakfast that ever greeted a hungry family! And it’s as easy as this:  Mix up Aunt Jemima batter according to package directions. Place cooked bacon strips on griddle and pour batter over each strip.  Bake ‘em golden brown on both sides. Couldn’t be easier – couldn’t taste better!  How about Aunt Jemima Bacon Strip Pancake at your house tomorrow?”

We made these in our breakfast themed class this week and they were as popular today as I imagine they were 50 years ago!

more blueberries!

After making the Banana-Blueberry Muffins yesterday, I still had some of the streusel topping leftovers, so I sprinkled a little over the pancakes as they were cooking. Hey, one can never have too much streusel in their life! See yesterday’s post to get the ingredients if you don’t have any streusel mix laying around but wish to do the same. Just cut the quantities down to about a fourth of the original amounts. This is one of the Optimum wellness foods. Full of nutrients and great for the body.

breakfast for dinner

Within the first couple weeks of each new year, predictions of upcoming food trends are announced.  One of my favorites this year is “breakfast for dinner”. Now, that is one trend I can get on board with! I love breakfast foods and I especially love to eat them for dinner, strangely it seems like such a treat. These light and fluffy little slightly savory pancakes with a lightly sweet topping are what I consider a perfect ending to the day.
