Rachael’s appetizer and little party bits

Connor’s friend, Rachael, brought these super easy and super tasty little appetizer picks. Luckily I was able to snap a photo before they were all snapped up!

No one had signed up for chips and dip, so I asked Connor to provide those.

I threw together a red, white, and blue flag snack tray using, red grapes, banana slices, strawberries, yogurt-covered pretzels, blueberries, and raspberries.

Lastly, I purchased a mock gingerbread house at Trader Joe’s, which was really a sugar cookie White House and I pretended like it was Christmas in July. I loved putting it together since our long family tradition of Marissa and Connor each assembling their own Christmas gingerbread houses has fallen by the wayside. Mostly because they hate it! Oh well, a mom can reminisce.

super hummus

Before I post the final recipe from our Spring Reunion Dinner, I want to acknowledge that today would have been my mom’s 81st birthday. She passed away this past August after a long battle with Alzheimer’s. I wasn’t posting at the time, taking a break while preparing for Marissa’s wedding, but I remember her today. Happy Birthday, Mom. xoxo

Along with the Fresh Fruit – Smoked Salmon Spread, I served this “super hummus” as an appetizer to go with Lori and Jonathan’s super cocktails.

You can use store-bought hummus or any hummus recipe you like and then “pump it up” with these toppings.  I’m linking you with what I made, which is my favorite hummus recipe, it begins with dried chickpeas.

Martinipuff

Martinis have always seemed like such a sophisticated drink, probably in the past due to James Bond and nowadays thanks to one of my favorite television shows, Mad Men… Don Draper…deep sigh.

These delectable Martini Puffs are equally upscale and easy to make, as long as you can wait the full week for the olives to marinate. Equally wonderful, they can be assembled and frozen before baking, then go directly from the freezer to the oven for impromptu entertaining.

quick and easy appetizer #1

Tapenade Twists

With all the dishes you’ll be making for the big Thanksgiving feast, you need a couple of easy, quick, and tasty appetizers to go with the crudites. One of the quickest and easiest products to use is puff pastry.

Puff pastry can be purchased in the freezer section of the grocery store, usually near the pie crusts. Most grocery stores carry the Pepperidge Farms brand. Trader Joe’s also carries their own signature brand of puff pastry (you can pick up the tapenades there too). Both brands have two sheets of pastry per package, only one is needed for this recipe. Wrap well and refreeze the second sheet for future use.

Goat Cheese and Green Olive-Almond Pesto Crostini

The guest chef-instructor at Barbara Fenzl’s Les Gourmettes Cooking School this week was Chef Tim McGrath of Cook’s Gathering Catering in Long Beach, California. Tim is one of the most creative, sharing, and knowledgeable chefs I’ve ever met.  I am constantly being asked for a recommendation for a caterer here in town and each time, I wish that Tim was in Phoenix, because he would always be my very first choice, hands down!  When I told Tim that, he let me know that he would be willing to fly to Phoenix to cater a party, so if you ever have a need for something really special, he’s your man!  For class, he served Mini Ahi Tuna Kabobs with this outstanding “pesto”.  One of the best things about Tim’s classes is that he’ll be teaching you a dish and then give you a dozen other ideas of what to do with that recipe.  When he suggested using this olive pesto on a crostini with goat cheese… well, that is right up my alley!  A great bonus… it’s “Easy – Breezy” and the colors lend themselves perfectly to the upcoming holiday season.

What is it that makes this recipe so “Easy – Breezy”?  Well, besides using the food processor to make the pesto and the fact that it is a quick and delicious appetizer, every single ingredient can be found at Trader Joe’s!  The roasted piquillo peppers are sold in a 10.4-ounce jar, and you can’t find a better price on the almonds, goat cheese, or olive oil anywhere in town.  You will notice this recipe does not call for salt, that is because the olives and their brine are salty enough.  The brine is used to thin out the pesto.  Unlike traditional pesto that uses basil, the olives and almonds do not have a high water content, thus the brine is needed to create the perfect consistency.
