gingerbread time!

At the Craft Party last weekend, it may have been warm outside and most of the guests were wearing shorts and sundresses …. that doesn’t mean we can’t begin to dream about and enjoy the fun and flavors of fall and winter!

What the heck!??! We were making fall and winter crafts so we may as well eat food associated with the season! With that in mind, I made these tasty gingerbread muffins.

Gingerbread Muffins

  • 2 cups flour
  • 1 teaspoon ground ginger
  • 2 teaspoons baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/3 cup milk
  • 1 egg, lightly beaten
  • 8-ounces sour cream
  • 1/4 cup packed brown sugar
  • 1/4 cup molasses
  • 2 tablespoons sugar
  • 2 tablespoons finely chopped crystallized ginger

Grease 12 muffin cups; set aside.

south of the border muffins

I’m calling these “Mexican-Chocolate” because of the cinnamon and chocolate combination. If you’ve ever eaten or cooked with the Ibarra brand of Mexican chocolate, you understand.

On a totally unrelated subject – I haven’t been sleeping well lately. I keep waking up before the sun – but that turned out to be a blessing yesterday.

I got out of bed at about 4:30 and decided to make these muffins since I needed to take something to our neighborhood Bunco later that evening.

The day was a whirlwind, I wasn’t home for more than 15 minutes all day. If I hadn’t made the muffins early in the morning … I would have never had time to make a thing and would have had to resort to bringing a bottle of wine.

As you might imagine, that doesn’t fly when you have a cooking blog and teach people to cook!

Sometimes sleep deprivation actually pays off.

Now, I know that for some, 4:30 or 5:00 is a normal and routine time to begin their day. I’ve had that schedule before, so I get it. But back then, I fell asleep before midnight or 1 AM too.

Let’s face it – sleep deprivation totally sucks! Conversely, these muffins do not.

elusive

1 pound muffins

It doesn’t make sense that this recipe did not appear on my blog long ago.

I developed it back in the late 1990’s and it was published in “Reflections Under the Sun: The Brightest Collection of the Best Recipes from the Junior League of Phoenix” in 1999.

I remember being so pleased when the JLP requested a recipe from me. I hadn’t been a member for a couple of years by then.

I had become a member in 1992, back when the previous cookbook was being published, joining too late to participate in that project.

Anyhow, everyone loves these muffins. We often make them for our graduation luncheon during summer cooking classes with the teens and there is never a crumb left. How they have been so elusive and not yet appeared here, is beyond me.  Make a batch now and thank me later!

As promised – here is the recipe for the crunchy banana muffins.  If it looks like a whole lot of flour, sugar, and butter… well, it’s because this recipe makes a boatload of muffins….  30 anyway, and that’s a bunch from one recipe. Enjoy!

for Marissa

I’ve scrolled through all 1,577 of the comments left on this site and found that well over 30 of them are from my darling daughter, Marissa, saying something like this – “Send me some!”  “Save some for me.”  “Make that for me when I come home!”  and most recently, “I’ve decided I’m going to comment on every post of something I want, asking you to send it to me, until you actually do send me something.”  

What’s a mother to do? My girl used to live in Tucson, so it was easy to plan a quick trip and just drive down to stay overnight and cook for her and her darling roommates. But now she lives about 750 miles away in San Francisco.  And although I would love nothing more than to hop on a plane every few weeks and spend time in that gorgeous city with my gorgeous girl, that isn’t very practical or even possible.

So I’ve made muffins.  Muffins to freeze and ship to her.  Marissa, please share them with your new darling roommates and rest assured, they are made with enormous amounts of love. xoxo

Double “B”

Now that Marissa is living back at home, the house is always filled with a boatload of friends. Her boyfriend, Albert, and three other friends from Tucson drove up yesterday and stayed overnight. Luckily, I picked up a 2-pound box of blueberries at Costco yesterday and I happily found 3 overripe bananas in the fridge. Thus they shall have these muffins plus blueberry pancakes for breakfast. Actually, by the time they roll out of bed, it’ll probably be more like brunch. The pancake recipe will be up tomorrow.
