Fixed!!

Good morning! Happy Day! Sunny Sunday! All the good vibes have arrived!

I’ve been struggling with this website for many months. It’s been extremely difficult to create a post on my end because the site was being uncooperative and dropping content, photos, etc. And I know that on your end the site was taking FOREVER to load. Not just for you, but for me. When I needed to search for an old post, it would take up to five minutes for the search bar to appear. I’d nearly given up … but it’s all fixed! I hope you notice an immediate difference.

In celebration, let’s make some decadent lobster tacos!

be mine

On Valentine’s Day evening, Dave walked into the house with two huge bouquets of flowers for me and I made seafood pasta for him. Although dinner was delicious, I think I got the better end of that exchange. The meal is long over and there have been four more dinners since then, but my beautiful flowers are still bringing me the reminder of being loved. <3

Note: To make the rose napkins above; Open a large cloth napkin. Fold in half diagonally. Beginning at the long end, roll into a rope. Then start at one end of the rope and roll into a spiral. Secure with a paper clip if needed and “garnish” with real rose leaves. I swiped the ones I used from my neighbor’s yard! She loves me, so it’s OK.

guilty pleasures

In May 2000, when Connor turned nine, we took a family trip to the east coast; Newport, Rhode Island,  New Hampshire (including the Ben & Jerry’s factory), Philadelphia, New York City (Statue of Liberty, Broadway, the Empire State Building, Times Square, etc.), Washington D.C. (Smithsonian, White House, Capitol, all the monuments, etc.), Colonial Williamsburg, Arlington National Cemetery, and Mount Vernon.  The highlight of that trip for Connor – and about the only thing he remembers, besides celebrating his birthday – was his first taste of lobster (Yes, that is the actual moment in the photo above)! He immediately fell in love and ate lobster at every meal it was available for the rest of the two-week vacation.  His happiness came to a screeching halt when we arrived back in Arizona and he learned that lobster was a seriously special treat, not an everyday staple, like say, peanut butter, and jelly sandwiches.

He still loves his lobster and I know that when he sees this post, he’ll be begging me to make it for him when he comes home this summer.  I love him to pieces, so I will!

The other guilty pleasure I want to show you is this fabulous vintage grocery store scale I purchased on Thursday at Sweet Salvage. Isn’t it amazing!?!  It obviously needs to be calibrated… or maybe I’ll just let it be.

Back to the lobster … I read an article about this over-the-top sandwich made by the Devilicious Food Truck from San Diego, California, and had to try and copy it at home. It was a major success!

Lobster risotto

Once I decided to make lobster risotto with the lobster stock I made in yesterday’s post, I remembered that some time ago I had seen somewhere a recipe from Emeril Lagasse using lobster oil. I Googled “lobster oil” and quickly was taken to his recipe. It was an easy and delicious addition to the risotto.

red lobster

In addition to the wonderful duck skin I brought home from Les Gourmettes after the last class of the season, I also was privileged to receive 3 lobster shells. I used them to make 4 cups of lobster stock, 2 cups of which I have used to make luxurious Lobster Risotto. I happened to also have a frozen lobster tail in my freezer, so I’ve cooked the tail, used the meat for the risotto, and used that shell to make lobster oil, which is drizzled on top of the finished dish… truly outstanding!

In the next week, I plan to take the remaining 2 cups of lobster stock and make another dish, maybe a Maine lobster bisque…. I’ll decide upon that later and share with you what transpires. In the meantime, here is the recipe for the lobster stock… tomorrow the oil and risotto will be posted.

a day late…

I have an excellent excuse for not posting yesterday and delivering with the promised seafood crepe recipe. I was on a “special, highly covert, high-security assignment” revolving around THIS, for the Food section of our newspaper, The Arizona Republic.

OK, it wasn’t exactly “all that”! But I was developing recipes for the cover story of the Food section for an upcoming issue. So, I was busy! And the story/recipes really do revolve around THAT.

As bizarre as it certainly sounds, I will fill you in on the details after the story runs in the newspaper, it’s quite amusing, (Let’s just say that THAT had never ever crossed the threshold of my home before this task was handed to me – and all of my friends and family were in a state of shock to see it sitting on our kitchen counter!) so stay tuned.

Now the promised, exceedingly sought-after, and highly anticipated “special occasion” crepe recipe…
