cranberry fizz

cranberry-fizz

The signature cocktail for the German-Swiss Dinner Party was a blend of cranberry juice, Grand Marnier and Prosecco. If I had more time and energy I would have dressed it up with a few fresh cranberries and a sprig of thyme or rosemary.

But you know what? Those accouterments prevent one from quickly downing their cocktail, they just get in the way. Now that I think about it, I’m glad I didn’t dress it up!

Here are most of the guests, some with cocktails in hand, celebrating Tram & Steve for being named Best Power Couple in the October “Best of Phoenix” issue of Phoenix Magazine. I know they were a bit embarrassed that I placed an issue of the magazine on each table and then made them pose for me. What can I say? I’m proud of them!

Plus, it’s such a great photo of an amazing couple! Congratulations Steve & Tram! Love you to pieces!

Cocktail Infusions

The original craft that Tram planned to bring for the Craft Party was a very cool black and white-painted harlequin pumpkin. She and I looked at several options on Pinterest and we were both quite excited about it.  Then… time passed and well, if you’ve read this blog for more than a few months, you know that Tram has adorable 7-month-old twins, Zak & Zoey.

Z&Z

Yeah, I know! They are just about the cutest thing on this Earth! And to think that when they start talking up a storm, they will be calling me “Aunt Linda” – I’m super excited about that!

Anyhow, Tram has her hands more than full. As the party approached, I decided to take the pressure off and offer an easier craft option. One that I could help her with and one that was close to her strength. One with coffee! You also probably know that Tram and her husband, Steve, own Press Coffee Roasters.

So… I found some awesome bottles. Here are the bottles we used. Next, I gathered up all the ingredients needed – except some cinnamon sticks, and the coffee, of course, which I left to the expert! Somehow, between the two of us, we came up with the most popular craft at the party.

Cocktail Infusions!

And not just one flavor, but three delicious options!

Shopping Notes: All of the dried fruits were purchased at Trader Joe’s.  The whole spices can be found at any grocery store. The brown sugar cubes at Cost Plus and the rock sugar at an Asian market.

They come together in no time and make THE perfect hostess gift for the holidays. Or just a super cool thing for your own bar. Enjoy!

cranberry

To make the Cranberry Infusion:

Gently remove the cork topper.

Place about 5 of each of the three varieties of cranberries in the bottle. Add 2 brown sugar cubes and 8 white rock sugar pieces. Tear 2 of the large pieces of the dried Mandarin fruit into the bottle.

Return the cork topper and add the Cranberry Infusion label.

(Trader Joe’s carries at least three varieties of cranberries. All have slightly different coloring and textures, so I bought 3 packages for added interest. You can use just one variety and drop in 15 cranberries of the same type.)

ginger

To make the Ginger-Cardamom Infusion:

Gently remove the cork topper.

Place 4 pieces of the Crystallized Ginger and 6 pieces of the Uncrystallized Ginger in the bottle. Add 2 brown sugar cubes and 8 white rock sugar pieces. Add 1 tablespoon of Cardamom seeds to the bottle. Tear 2 of the large pieces of the dried Mandarin fruit into the bottle.

Return the cork topper and add the Ginger-Cardamom Infusion label.

(Same thing with the ginger. It would be perfectly fine to just use either ginger, but the two add a better look to the bottle with more variety and interest.)

espresso

To make the Espresso Infusion:

Gently remove the cork topper.

Place 2 tablespoons of coffee beans (preferably Press Coffee!) in the bottle. Add 2 brown sugar cubes and 6 white rock sugar pieces. Next, add 1 piece of vanilla bean (cut a vanilla bean in thirds and just add 1/3 of the bean) plus 1 piece of cinnamon stick, and 3 whole loves.

Return the cork topper and add the Espresso Infusion label.

winter shortcake

sweet potato cranberry shortcakes

The final Thanksgiving leftovers recipe of the season is a dessert, using up the last of your mashed sweet potatoes, cranberry sauce, and whipped cream. It’s a wintertime take on strawberry shortcake.

If your sweet potatoes weren’t mashed, mash them before making these biscuits.

powdered buttermilk

Oh, and did you know that you can buy powdered buttermilk? I’m not certain if I’ve mentioned this product before, but it sure is handy to have when you have all the ingredients for a recipe … except buttermilk. And isn’t that the point of using up leftovers – being able to use what you have and not having to make a special trip to the grocery store? It’s simple to use. Just as with powdered regular milk, you just mix it with water.

butter bits

One last note – One of the secrets to light and flaky biscuits is to not overwork the dough. When handled with a light touch you should be able to see specks of the fat, whether that is butter, as in this recipe, or vegetable shortening or lard. Less is better when it comes to biscuits.

summer salad

I was using up the wheat berries that I had left in my freezer from THIS recipe. You could use cooked quinoa, Israeli (pearl) couscous, farro, bulgur, or barley for this delicious and refreshing summer salad.

cranberry pinwheels

These pinwheels are an adorable, festive, and savory appetizer fit for any holiday table. When I made them for the Christmas Craft Party, I wasn’t able to find the lovely green spinach tortillas. I hope you will search them out if you whip this up for Christmas, the mix of green and white tortillas makes for a lovely presentation.

Tomorrow and Saturday – are the last two days of my 12 days of Gifts from the Kitchen series. Hope you’re excited!

cranberry mojito and Christmas crafts

Yesterday, Sheila and I hosted a Christmas Crafts Party for our friends. Most of the participants from my Burlap Pumpkin Class were there and we had a great time, up in Sheila’s fabulous craft room, creating away!

The gorgeous paper cone wreath you see above was made by the very talented and patient Christa. Only four of us tackled the wreath and Christa’s won the blue ribbon!

Or maybe we’ll call it the Red Ribbon since it’s a Christmas wreath… with a red ribbon! Congratulations, Christa, your “best in show” is well deserved.

Here you see Sheila giving instruction on two of the other crafts; a rag ornament and snowballs.

There were 15 of us and along with crafting, we of course had lunch! The recipes will follow in the coming days.

Today, we’ll start with the cocktail. I used some of my Cranberry Vodka to make Cranberry Mojitos. That recipe and more craft photos are below.

Second Day of Christmas Gift

The second installment of Twelve Days of Christmas Gifts from the Kitchen.

On the second day of Christmas
My true love gave to me:
Cranberry Citrus Vodka
and a bottle of Tomato Dust

This crimson cranberry vodka is easy to make, just a little time-consuming because you must poke each cranberry to open it up so it will impart its goodness into the vodka. But it is time easily spent.  I used a wooden skewer and did the chore while I watched television. I was done in no time.

Make whatever quantity you want, but I can share with you that 3-pounds of fresh cranberries, 2 lemons, 2 limes, 3 tablespoons sugar, and a 1.75-liter bottle of vodka will make three 1-liter bottles of Cranberry Citrus Vodka.

You need to put this together at least 2 weeks before you plan to use it or give it away. When giving as a gift, it would be ever so thoughtful to include a Crantini recipe card with your gift. The recipe for the Crantini is at the end of the post.

egg bread braid

Challah is an egg bread that holds deep religious significance in the Jewish faith.

“According to Jewish tradition, the three Sabbath meals (Friday night, Saturday lunch, and Saturday late afternoon) and two-holiday meals (one at night and lunch the following day) each begin with two complete loaves of bread.  This “double loaf” commemorates the manna that fell from the heavens when the Israelites wandered in the desert for forty years after the Exodus from Egypt. The manna did not fall on the Sabbath or holidays; instead, a double portion would fall the day before the holiday or sabbath.” (excerpt from Wikipedia)

Challah recipes always make enough dough for two loaves. Three important steps to the perfect challah are; three risings instead of the usual two (one of those being a slow-rise in the refrigerator), using two coats of egg wash for a shiny lacquer-like crust, and not over-baking.

Challah is delicious and used the next day for French toast.  Especially loaves with raisins, or in this case, craisins.  I substituted dried cranberries for the raisins, as my family prefers craisins to raisins. We’ll be enjoying the plain loaf with our Easter dinner on Sunday and the craisin loaf for a French toast breakfast on Easter Monday.

cookies for breakfast… you bet!

Cookies for breakfast?  Sure, why not?  These particular cookies are packed with healthy stuff – dried fruit, almonds, cereal… and…. bacon. OK, not healthy bacon, but yummy breakfast-time bacon. Plus they aren’t too sweet, just right.  Great to eat if you have no time in the morning. Pop them in the freezer and just grab one or two on your way out the door and you have breakfast!
