Anne’s birthday entreé
Halibut Asian Style
- 2 pounds halibut fillets, cut into chunks
- 3 tablespoons sesame seeds
- Olive oil
- Sesame oil
- 3 large garlic cloves, peeled and thinly sliced
- 2-inch piece of fresh ginger, peeled and grated
- 1/4 cup soy sauce
- 1 lemon
- 5 sprigs of fresh coriander, leaves pulled off
- 2 green onions, thinly sliced on the diagonal
- 1 fresh red chile, thinly sliced on the diagonal
Place the sesame seeds onto a flat dish, then add the halibut chunks, turning them over in the seeds to nicely coat.
Heat 1 tablespoon of the olive oil and 1 tablespoon sesame oil in a large skillet over medium heat. Add about 3/4 of the sliced garlic to the pan and fry for 1 minute, or until golden and crisp, remove from heat and use a slotted spoon to quickly transfer to a plate, leaving the oil in the skillet.
Return the pan to the heat, then add the sesame-coated halibut to the garlic oil. Sear on one side for 1 to 2 minutes. Using a spatula, turn over and cook on other side for another 2 minutes. Transfer to a plate.
Place the grated ginger in a small bowl with the soy sauce, 1 teaspoon sesame oil and the remaining sliced garlic. Add the zest of the lemon and 2 tablespoons lemon juice, then mix well to combine. Taste and add more lemon juice, if needed.

There are very few recipes left to share with you from the wedding, since all the fillings have been posted and several of the sides and topping recipes are here in previous posts. Click on these links to find them:
So that only leaves the Creamy Cilantro Sauce, Refried Black Beans, Tomatillo Rice and Cilantro Chimichurri. Since the chimichurri is an easy “dump in the blender and turn on” recipe, we’ll start with it.

thanks Jenny!
This quick, easy, and delish recipe comes from my Illinois BFF, Jennifer. My girl knows how to throw together a fabulous dinner like no one else! With three busy sons, who run her ragged, she is the master. Love you, Jenni-Jen! xoxo

slurp your greens
There is a multitude of things I like about this soup; #1 It is super green – one of my favorite colors, #2 It is super healthy – no roux or cream to thicken, and #3 It is super versatile.
Plus, it is perfect for St. Patrick’s Day thanks to its super greenness (only about 23 days away – yes I do count it down- I can’t help it – I’m 100% Irish !) It is already plenty healthy as is, but even more so when prepared vegetarian style using vegetable broth and tofu instead of chicken broth and chicken. And it is perfect for Lent, just replace the chicken with cooked and diced shrimp and you’re all set for a Friday night meal.
