day two and day three – week one
Here are the recipes for Day Two and Day Three of Week One of the “Detox Cuisine” Cleanse.
Day Two
Cucumber-Pear Juice
Creamy Broccoli Soup (leftover from yesterday)
Cauliflower “Rice” Stir-Fry
I was in a rush to get out the door yesterday morning, so instead of pulling my juice extractor from the garage to make the Cucumber-Pear Juice, I used my Vitamix to transform it into a Cucumber-Pear Smoothie. It was a refreshing and tasty breakfast.
I wouldn’t advise using a regular blender to make the smoothie, but a Vitamix is powerful enough to turn a sneaker into a smoothie!
Plus, I felt good about the extra fiber I would have missed out on if I’d used my ACME Juicerator.
And the Cauliflower “Rice” was a revelation!
I honestly didn’t think I was going to like it and wasn’t thrilled about making it. I thought about just having more of the soup for dinner. But I knew I’d want to tell you about it, so I gave in and made this dish.
So Happy I Did!
You finely chop the cauliflower in the food processor and then steam it and use is as “rice” for your stir-fry. Brilliant and so good!
The one change I would make for this recipe is cut the amount of onion in half. Use a half a red onion, and then instead of slicing the full amount of onion, dice half of that for the “rice” and slice the remaining portion for the stir-fry.
Day Three
Lunch and dinner are leftovers, so only the smoothie is a new recipe on day three. It is my favorite smoothie yet!
