cookies for breakfast… you bet!

Cookies for breakfast?  Sure, why not?  These particular cookies are packed with healthy stuff – dried fruit, almonds, cereal… and…. bacon. OK, not healthy bacon, but yummy breakfast-time bacon. Plus they aren’t too sweet, just right.  Great to eat if you have no time in the morning. Pop them in the freezer and just grab one or two on your way out the door and you have breakfast!

Cereal, Fruit, Nut, and Bacon Breakfast Cookies

1 cup flour
1/4 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
1 egg, room temperature
2 cups Special K cereal
5 slices maple bacon; cooked crisp, drained, and crumbled
1/2 cup dried cranberries
1/4 cup slivered almonds

Preheat oven to 350 degrees.  In a small bowl, whisk together the flour and baking soda.

In the bowl of a standing mixer, beat together butter and sugar until light and fluffy.  Scrape down the sides of the bowl and mix in egg until just combined. Stir flour mixture into the butter mixture. 

With a rubber spatula, fold in the cereal, bacon, cranberries, and almonds.

Drop by rounded tablespoonfuls onto Silpat or parchment-lined baking sheets, spacing 2-inches apart. Bake in preheated oven for 15-18 minutes, switching the pans after the first 8 minutes.  Cool on baking sheets for 2 minutes, then remove to rack to cool completely.

Makes 3 dozen
